Putting Together a Market-Fresh Meal

I tend to get overwhelmed with all the beautiful produce at the market each week. The peaches are fresh, the tomatoes are beautiful, the corn BEGS for a taste; it all seems very much like it COULD all come together for a fantastic dinner … if only …. 

We’ve put together a meal plan for you with some recipes to inspire you towards creating a mid-week showcasing fresh-from-the-garden goodness. You may have some of the ingredients already in your pantry, but here’s your list from the Grayson Farmers Market:

  • Ground Beef
  • Herbed Goat Cheese
  • Mozzarella Cheese
  • Corn
  • Patty Pan Squash (go for it … try something a little “not zucchini”)
  • Basil
  • Parsley
  • Butter Beans
  • Tomatoes
  • Cucumbers
  • Fresh Bread
  • Blueberries, Blackberries and/or Peaches

Make the ground beef into patties and season them as you usually would and grill them to your taste. Serve them without a bun, but with a healthy topping of the herbed goat cheese.

Corn. Let’s try something different with the corn by grilling it … with some butter and parmesan! 

Though I’m pretty sure that pattypan squash is NOT something new, it is a big hit this year as market-goers are learning about fresh, locally grown produce. This sautéed squash recipe has been tested by Sylvia “Not Gail” Still and approved by her family. If you find the pattypan intimidating, you could easily substitute in some zephyr squash or zucchini and still enjoy the yumminess!

Home-style butter beans. Really, can it get more “down home” and “real” than butter beans? Though this recipe calls for frozen butterbeans, you’ll find the REAL DEAL fresh ones at several of the booths in Grayson.  

Ahhh … the salad Use the beautiful tomatoes found throughout the market; maybe mix it up with a few varieties or use the small heirloom or Sungolds you’ll find at some of our vendors. Kinda hard to make this one anything but amazing! 

Top off your meal with a fruit cobbler. This week, you’ll find peaches, blueberries and blackberries throughout the market. Find the one that suits your family best – or heck, use all three!
