Remarks: Ineffective cleaning methods observed. The non-stationary rack dishwashing machine failed to provide a temperature of at least 180 F for the heat sanitizing rinse. Linguini and penne pasta were not cooled to 41F or lower within six hours. All time/temperature controlled for safety foods (TCS foods) in the top chamber of the prep cooler, which faces the fryers, were not being maintained at safe temperatures. Follow-up inspection will be conducted on or before March 21, 2014.

Remarks: Red velvet, vanilla, dutch chocolate, and peanut butter were above 41. Single use items including yogurt cups were found stored on the floor. Food stored in cans once cans opened. Two of the yogurt machines for self service not maintaining temperature of yogurt.
