Remarks: Grilled chicken cooling in walkin cooler not cooled to 70 degrees within 2 hours. Seven boxes of syrups for fountain drinks expired and one package of food coloring. Deep container of grilled chicken placed in walkin cooler to cool. Container was vented for the first hour of cooling, but was completely covered before the second hour of cooling. Chicken discarded. Wall of window panes separating the public from the pizza prep area is missing two window panes.

Remarks: Raw scallops were stored above cooked wontons in the prep cooler. 2. Raw chicken breasts were stored above cheese wontons in the walk-in freezer. Storage containers on the shelf near the ice bin and above the compartment sink with visible food debris present. Air temperature of the reach-in cooler is 63°F. Air temperature of the cooler must be 41°F or below. Equipment shelving above the compartment sinks and exterior of pans have dust or grease buildup. Live roaches were on the clean equipment above compartment sink and on the shelf below the steam well.
